Start with the product you are making
A biscuit dough, a baked cake and a fat-based coating are different qualification tasks. Tell us which product you are developing, the ingredient you want to evaluate and the result you want to achieve. Our range also lists the light profile for bakery and cereals, so the right starting sample depends on the brief.
Medium is described in our range as a rounded cocoa-like profile; dark as deeper colour and roasted notes. Evaluate the finished product against your reference rather than treating a powder photograph as a colour specification.
A trial record for bakery and confectionery
| Application | Keep a record of | Evaluate in the finished product |
|---|---|---|
| Biscuits and baked goods | Recipe reference, inclusion level, dough mixing and baking conditions | Colour, flavour and texture after the defined cooling period |
| Coatings and spreads | Recipe, mixing sequence, equipment and process temperature | Colour, roasted notes, texture and processing behaviour |
| Cereal or snack blends | Powder profile, blending sequence and processing conditions | Distribution of colour and flavour in the finished blend |
Make comparisons interpretable
Use a named reference recipe and identify each sample or lot. If you compare two roast profiles, keep the other trial conditions comparable and record any deliberate recipe changes. Your team should set the pass/fail criteria and the observation period before evaluating the samples.
The application program is a starting point for qualification. It does not establish a fixed cocoa-replacement ratio, identical flavour, a finished-product shelf life or a saving in ingredient cost. Those decisions need the recipe, trial observations and current quotation.
What to send with your sample request
- Product type: biscuit, cake, coating, spread, cereal or another application.
- Current recipe objective and desired colour or flavour reference.
- Raw, light, medium or dark profile to compare, if already selected.
- Target particle-size criterion and any required test method.
- Product specification, allergen information and batch CoA needed for your file.
- Expected volume, pack and delivery destination for the commercial discussion.
From a successful trial to a supply request
Once your team selects a sample, keep the profile reference in the procurement request. Confirm the agreed specification and document scope for industrial supply. The program lists 500 g technical samples and 20–25 kg industrial bags; availability and terms are confirmed with the team.
