Define what you want to change
A cocoa-alternative project may concern colour, flavour direction, ingredient selection or sourcing. State the intended result and the cocoa ingredient being evaluated before choosing a carob profile. A coating, baked biscuit and beverage need different trial briefs.
Our application program lists medium and dark 75 µm profiles for bakery and confectionery projects. Medium is described as a rounded cocoa-like profile; dark offers deeper colour and roasted notes. These descriptions help choose samples and do not promise an identical cocoa flavour.
Use a trial rather than a universal replacement ratio
This page does not prescribe a 1:1 replacement or a fixed substitution percentage. Ask the formulation team to choose the initial trial levels and compare the finished product with a reference. Confirm the selected profile and application with Carob Orchards when requesting the sample.
Comparison checklist for your team
| Area | Record in the trial |
|---|---|
| Recipe | Reference recipe, carob profile and tested inclusion level |
| Sensory | Colour, sweetness, roasted notes and overall acceptance |
| Process | Mixing sequence, equipment and relevant process conditions |
| Finished product | Texture and the storage observations required by your project |
| Commercial | Approved specification, pack, quantity and delivery term |
Qualify the material and finished product separately
Request the current technical specification, allergen information and batch CoA for the chosen carob material. Finished-product labelling, nutritional statements and any claims need their own assessment for the recipe and destination market. No nutritional or health outcome is established by the sample request.
Send an application brief with the sample request
- Bakery, confectionery, beverage or another specified application.
- Cocoa ingredient and current recipe objective.
- Desired colour and flavour reference.
- Profile to evaluate, target fineness and required documents.
- Expected volume and destination if commercial supply is being considered.
